Coconut Shrimp is a frequent flyer on lots of restaurant menus. But I am here to tell you it’s sooooo easy to make it at home. First, Make the Sauce: In a blender, combine mayonnaise, pineapple, honey, El Yucateco Grilled Pineapple Habanero Hot Sauce, curry powder, salt, lemon juice, and cilantro. Blend until smooth and refrigerate.
Prepare Your Oil:
Fill a deep frying pan with about 1 1/2 inches of vegetable oil. Heat the oil until it reaches a temperature between 350°F (175°C) and 375°F (190°C). You want to make sure you have the right temperature so it’s hot enough to get the shrimp nice and crispy.
Prepare the Breading: Grab three plates and set up one with breadcrumbs, one with beaten eggs and hot sauce that has been seasoned with salt and pepper, and one with shredded coconut. Pat the shrimp dry with a paper towel and dredge each shrimp in breadcrumbs, then in egg, and finally in coconut.
Let’s Fry, Baby: Again, make sure your oil is at the correct temperature. A good way to tell the temperature if you don’t have a thermometer is to put a spoonful of coconut in the oil. It should be brown in 2 minutes or so. Fry shrimp in batches for about 3-4 minutes or until golden and crispy.
Drain the fried shrimp on a piece of paper towel.
Serve shrimp alongside your Spicy Pineapple Dipping Sauce and Enjoy!
Tips for the Best Coconut Shrimp with Spicy Pineapple Dipping Sauce:
Breading: Try to keep one hand to dip in the wet ingredients and one hand to dip in the dry ingredients. Otherwise, you end up breading your hands like I did in addition to the shrimp!
Frying: Don’t overcrowd the pan! Make sure you fry in small patches. If you crowd the pan it will lower the oil temperature too much and the shrimp will stick.
Spiciness: You can adjust the flavor of this recipe to your liking by adding more El Yucateco Grilled Pineapple Habanero Hot Sauce to make it spicier or more honey to make it sweeter.

- 1 cup breadcrumbs

- salt and pepper (to taste)
- vegetable oil ( for frying)
