Lifeway Organic Whole Milk Kefir is made with certified organic, full-fat milk with only 1g of added sugar per ounce.

Preheat your oven to 450 degrees. Spray a large roasting pan or sheet pan with non-stick cooking spray. Add tomatoes, onion, and garlic to the roasting pan. Toss with olive oil, salt and pepper and stir until evenly distributed.

Roast for 15 minutes, stir, and roast for an additional 15 minutes, broiling during the last 3 minutes so that some of the tomatoes get lightly charred.

In a large pot, melt butter over medium-high heat. Add the flour and whisk to combine. Cook until the butter and flour mixture is golden brown (about 45 seconds).

Add broth and sugar and whisk to combine. Add the roasted tomato mixture to the pot along with the basil. Use an immersion blender to blend the soup until smooth.

***TIP: if you don’t have an immersion blender you can add the roasted tomato mixture to a blender and blend until smooth. Allow the tomatoes to cool slightly before doing this.***

    Ingredients

    • 3 lbs tomatoes, fresh, cut into 2” pieces
    • 1 small onion, diced
    • 5 cloves garlic peeled
    • 2 TBS olive oil
    • ¼ cup fresh basil

    • 1 quart vegetable broth
