This Lemon Blueberry Cake uses Lifeway Organic Lemon Whole Milk Kefir and lemon zest for just the right amount of lemon flavor. I use fresh blueberries, but you could totally swap out frozen.

***TIP: if using frozen, toss them in a little bit of flour before adding to the batter. It will make them less “wet” and helps prevent them from sinking to the bottom of the cake.***

Lifeway Organic Lemon Whole Milk Kefir is made with certified organic, full-fat milk with only 1g of added sugar per ounce.

Preheat your oven to 350 degrees. Spray 2 loaf pans with non-stick cooking spray and set aside. In a large bowl, cream butter and sugar together for 3 to 5 minutes. Add the eggs and vanilla. Mix until combined.

Add dry ingredients and Lifeway Organic Lemon Whole Milk Kefir. Mix until combined.

Lemon Blueberry Cake

Carefully fold in the blueberries. Pour the batter into the pans and bake at 350 degrees F for 70-75 min or until a toothpick inserted comes out clean.

Let cool and mix the glaze while cooling. Whisk together all of the glaze ingredients until smooth. Once the pound cake is cool, pour over the glaze and enjoy!

  • 1¾ cups sugar
  • 3 eggs
