Are you looking for a quick and yummy after-school snack? Look no further! This recipe for apple toast is so quick and delicious. Your kids will gobble it right up.

I don’t know about your kids, but my kids come home from school like ravenous animals. You would think they haven’t eaten all day! All of that learning apparently works up an appetite equivalent to a full grown man. They want to eat everything in the house, especially junk food. I try really hard to have something somewhat nutritious ready for them to snack on.

These apple toasts are made with mini Naan bread. You could probably substitute pita bread instead if you can’t find Naan bread. First, toast the Naan bread in the toaster. Keep an eye on it because you only want it lightly toasted and it can burn quickly. Set the toasted Naan aside to cool.

In a small bowl, mix 4 oz. of mascarpone cheese with 1/2 cup confectioners sugar.

Next, slice 1/2 of an apple super thin. I use a Fuji apple, but you can use whatever kind is your favorite.

Spread the mascarpone mixture evenly over the 4 Naan pieces.

Yum! I could eat it just like that. I am going to control myself and set a good example here though.

Top with a few slices of apples.

Last but not least, sprinkle with some cinnamon, some nuts (I used walnuts), and a drizzle of honey.
