Need a recipe for amazing banana bread? Look no further! This banana bread will knock your socks off. It’s full of banana goodness with a yummy brown sugar walnut crumb topping. Here’s how I make it.
The cast of characters:
Preheat oven to 350 degrees. Grease 2 loaf pans with cooking spray and set aside.
In a bowl, mash up the bananas with a fork or a potato masher. Try to use pretty ripe bananas. You know the kind I’m talking about. The ones with all the “yucky black spots” that your kids will not touch with a 10-foot pole. The recipe calls for 5 bananas but if they are very large only use 4.
Add the eggs, sugar, and oil to the bananas and mix to combine.
I know, it doesn’t look all that appealing right now. But we will get there!
Add 2 cups of flour, baking powder, baking soda, salt, cinnamon, and nutmeg to the wet ingredients and stir until moistened.
Fold in 1/4 cup chopped walnuts.
Pour mixture evenly into the prepared loaf pans and set aside.
In a separate small bowl, combine the crumb topping.
Mix 1/4 cup flour with brown sugar. Cut in 2 tbsp. softened butter using a fork or pastry cutter until it resembles coarse crumbs.
Stir in 1/3 cup chopped walnuts.
Sprinkle crumb mixture evenly over the batter.
Bake in 350-degree oven for 55-60 minutes until you can put a toothpick in the center and it comes out clean.
Now you have some yummy, banana goodness.
