I LOVE pasta! I mean seriously, I am a true Italian and I could eat pasta for every meal. I like all kinds of pasta and all kinds of pasta sauce. I have never met a pasta dish that I didn’t like, I don’t discriminate.

My absolute favorite pasta sauce is Alfredo. It’s creamy, dreamy, and delicious! Making Alfredo sauce at home can be kind of scary for some home cooks. I am going to show you how easy it is to actually make Alfredo sauce at home so you can make it for any weeknight dinner.

You can use whatever kind of pasta you fancy here. I’ve used ziti, fettuccine, bow-ties, etc. I am using ravioli today because that’s what is in my fridge. Also, I am going to teach you the basic technique here that you can build on as you see fit. You can add veggies, or chicken, or even seafood if you want.

First, cook your pasta according to package directions. I’m using fresh ravioli that cooks super fast. Try to time your pasta and sauce so they are both done at the same time.

While the pasta is cooking, let’s prepare the sauce. In a medium-sized pan, saute 2 Tbsp. butter with a small clove of crushed garlic over medium-high heat.

Cook for about 5 minutes, stirring continuously, until bubbly. The smell in the kitchen will be intoxicating!

Add 1 1/2 cups of light cream to your pan. Season with salt and fresh cracked pepper.

Cook 4-5 minutes until the cream just starts to bubble.

Turn heat to low and add 1/2-3/4 cup of parmesan cheese. The amount of cheese you add will depend on how cheesy you like your sauce. I suggest starting with 1/2 cup, taste and add more cheese accordingly.

Cook for about 4 minutes until the sauce starts to bubble.

You will know that your Alfredo sauce is ready when it coats the back of a spoon. Yum! Give the sauce one last taste for seasoning and add more salt and pepper if needed.

Add your pasta of choice directly into your pan with the Alfredo sauce. Give it a stir (be gentle if you use ravioli so that the filling does not come out.)

Serve and enjoy!
